Las Hermanas Pimentón de La Vera Dulce comes from the ancient, mist-covered valley of La Vera in Extremadura, Spain — a microclimate so uniquely suited to pepper cultivation that it earned its own DOP designation, protecting a tradition of smoking and drying that has remained unchanged for centuries. The peppers are sourced exclusively from local La Vera farmers with a longstanding, trusted relationship with Las Hermanas, and smoked immediately upon picking — because freshness, here, is everything.
What follows is an extraordinary process. Ripe red peppers are dried over indirect-heat oak fires for 10 to 15 days, then finished over a slightly warmer fire for three more — slowly, patiently, until the moisture is drawn out and what remains is a vibrant crimson powder of extraordinary depth. The oak-fire smokiness hits first, bold and unmistakable. Then comes the pure, sweet red pepper flavor underneath — rich, slightly bitter at the edges, and deeply, authentically Spanish in every way.
