Vinegars
Explore our collection of Spanish vinegars — aged sherry, Pedro Ximénez, Moscatel and balsamic reductions from Andalucía. Bright, complex acidity to finish dressings, glazes, and reductions like a pro.
Southern Spain has made vinegar the slow way for centuries. In the bodegas of Jerez and Montilla-Moriles, wine is aged in oak barrels using the traditional solera system, where younger vinegar is blended into older casks year after year. The result is deep amber color, gentle sweetness and layered, nutty flavor that a supermarket vinegar can't match.
How to choose:
- Sherry vinegar (Sotolongo 10 Year Oloroso, Videsan Solera 77) — dry and nutty; the classic for vinaigrettes, gazpacho, pan sauces and lentils.
- Pedro Ximénez (PX) (Sotolongo 15 Year, Unico 50 Year Grand Reserva) — rich and raisin-sweet; drizzle over aged cheese, roasted vegetables, strawberries or vanilla ice cream.
- Moscatel — floral and fruity; perfect with salads, seafood and fresh fruit.
- Reductions and glazes — thick and syrupy, ready to finish a plate, a cheese board or grilled meats.
Pair any of them with our Olivar Santamaría extra virgin olive oil for a simple, unforgettable dressing. Free shipping on orders of $75 or more.
